Fresh-Frozen Whole Grouper

Whole fresh grouper, the fish that Chinese kitchens reach for when the meal matters. The flesh is thick, firm and snow-white, with a clean sweetness that stands up to ginger, soy and hot oil without being buried by them.

Steam it whole and finish it with shredded spring onion, ginger and a pour of hot oil and light soy, the classic way to serve it. It also works well cut into thick steaks for the pan, or baked with aromatics in a hot oven.
