Mantis shrimp are one of the sweetest shellfish in the sea, with plump, translucent meat and a firm snap that holds up beautifully to high heat. Ours are wild caught and selected for full bodies and clean shells, so there is more meat and less waste on every plate.

The flesh carries a natural sweetness that needs almost nothing done to it. Steam them briefly and serve with a light dipping sauce, flash-fry them with garlic and chilli, or add them to a seafood broth where their flavour deepens the whole pot.
